Pasta Pomodoro e Pancetta

Makes enough for 2 good portions
Ingredients
- 80g smoked cubetti di pancetta
- 1 tbsp olive oil
- 1 small onion
- 2 cloves of garlic
- 200g cherry tomatoes
- salt and pepper to season
- good handful or flat leaf parsley
- 2 portions of spaghetti / penne / pasta of choice
Method
- Dice the onion
- Mince or finely chop the garlic
- Fry the pancetta in the oil in a big frying pan or wok at high heat until it really gets some dark colour
- Reduce the heat a little, add the onion and garlic
- Get the pasta on to cook
- With 5 minutes or so to go with the pasta, add the tomatoes to the frying pan
- When the pasta is just about done, strain and add it to the frying pan
- Mix, chop and add the parsley
- Serve!
