Lemon, Cream and Smoked Salmon Pasta

Makes enough for 2 good portions
Ingredients
- 1 large unwaxed lemon
- 100g smoked salmon
- 25g butter
- 1 glass white wine
- 200ml single cream
- 100g parmesan
- salt and black pepper to season
- flat leaf parsley to garnish
- 250g pasta (Linguine or Spaghetti as favourite)
Method
- Grate zest from lemon
- Grate the parmesan
- Chop the salmon into bite sized pieces
- Boil the pasta in salted water
- Melt the butter in a large frying pan
- Add the lemon zest
- Fry gently for a few minutes
- Squeeze the lemon juice into the pan
- Add the white wine
- Boil and reduce until the mixture is syrupy
- Add the cream
- Add the salmon
- Season with the black pepper
- Drain pasta and combine with sauce
- Mix in parmesan and parsley
