Spicy Sausage and Bean Casserole

Makes enough for 2 good portions
Ingredients
- 2 chorizo style sausages
- 2 chicken thigh fillets / chicken breast strips
- 2 rashers of smoked bacon
- 1 small onion
- 1 clove of garlic
- 1 stick of celery
- 1/2 a green pepper
- 2 tsp Creole Seasoning
- 1 227g tin of chopped tomatoes
- 175ml chicken stock
- 150g large king prawns
- 125g long grain rice
- Olive oil
- Parsley
- Spring onions
- Lemon Wedges
Method
- Fry Sausages in a big pan until browned. Remove from the pan and cut into halves or thirds
- Fry the bacon in the same pan until heading towards crispy
- Add the onion, garlic and chilli, fry for a few minutes
- Add the sugar
- Pour in the tomatoes, wine and 100ml of water
- Stir in the beans and sausages
- When at the boil, transfer to slow cooker for 30 minutes - 3 hours..
- Serve sprinkled with the chopped parsley and bread
