Salmon, Mint and Parsley Pasta
Serving
Makes enough for 2 portions
Ingredients
- 250g pasta (spaghetti, linguine, fusilli… they all work with this one!)
- 250ml white wine (I'd start with a bottle)
- 100g hot smoked salmon (it's normally already in flakes)
- 15g fresh mint
- 25g curly leaf parsley
- 3 tbsp creme fraiche
Method
- Chop mint
- Chop curly parsley
- Cook pasta
- Reduce the wine in a frying pan until its a little syrupy
- Add creme fraiche
- Mix well
- Add salmon
- Add mint and parsley
- Drain pasta and mix in the sauce
- Serve with a glass of wine each!
